When it comes to edibles the pickings have been slim so far this year, at least for us. So what do you do with a handful of white Chanterelles? I decided to make soup with half and pizza with the other.
White Chanterelle and Lentil Soup with Sausage
This recipe was inspired by a recipe for chanterelle lentil soup that can be found here. I followed the recipe fairly closely for the base of the soup but used red lentils instead. In addition, I added about a 1/2 cup of sour cream and then blended the soup. I also added some cooked sausage and finished by topping the soup with roasted chanterelles and fresh herbs. It was delicious and we will definitely be adding this to our chanterelle recipe rotation!
White Chanterelle Pizza
I roasted the chanterelles with just a splash of olive oil before putting them on the pizza. This helps get some of the moisture out so your pizza doesn’t get soggy. You can use your favorite pizza dough recipe or buy pre-made pizza dough (which is what I did). In addition to the roasted chanterelles, I used some sausage, fontina cheese and a white sauce as the base. I baked the pizza at 500° and the thin crust got nice and crispy!
